    Brown beef in olive oil. Dice vegetables. Put carrots, onions, celery in crockpot. Mix in garlic and seasoning packet. Add beef, water, tomatoes, and bay leaves. Cook on low 6-8 hours. Then add potatoes and barley and cook on high 1-2 hours. Combine flour with 1/2 cup of water, and add to crockpot in last 15 minutes of cooking.

    I am really sorry to informFor those of you in mywho have not heard the news, our Saturday morning Red Mill meetings that we will not behave found a new home. We are now meeting tomorrow, 9/12. Unfortunately, the deal with Sentara has fallen through and we will not be allowed to meet there. Please know that we are diligently looking for another locationat Courthouse Community United Methodist Church on this side of town.
    If you know of anyone who usually attends these meetings, who is not on FB, please advise them of
    Princess Anne Road. The meeting times have remained the situation. As soon as we have another location to meet at, I will be suresame: 7:30 & 9. Hope to letsee you all know. Please hang in there with us. WE WILL FIND A NEW HOME VERY SOON!there!
    If you'd like to visit me at another location, you can find me at Broad Creek (Military Hwy & Northhampton) on Monday @ 6 PM and Thursday @ 10 AM. I'm also at Greenbrier on Wednesday @ 6. Would love to see you all at one of those meetings! We will miss you all tomorrow!

    am really sorry to say that we have lost our lease at Red Mill! Our lastinform those of you in my Saturday morning meetings will be on September 5. The good news is that we have a new home for both Saturday meetings. We will not be meeting, beginning on September 12 at Sentara Princess Anne Hospital. You can pull intomeeting tomorrow, 9/12. Unfortunately, the parking garage and turn right. Park there and then godeal with Sentara has fallen through the double doors on the right. Take the elevator up to the 3rd floor and you'll see uswe will not be allowed to meet there. Please make sureknow that we are diligently looking for another location on this side of town.
    If you know of anyone who usually attends these meetings, who is not on FB, please advise them of the situation. As soon as we have another location
    to meet at, I will be sure to let you all know. Please hang in there with us. WE WILL FIND A NEW HOME VERY SOON!

    I am sorry to say that we have lost our lease at Red MillMill! Our last Saturday meetings will be on May 26. I am sorry to saySeptember 5. The good news is that we have a new home for both Saturday meetings. We will be meeting, beginning on September 12 at Sentara Princess Anne Hospital. You can pull into the parking garage and turn right. Park there wasn't enough participation to continue this meeting. I do hopeand then go through the double doors on the right. Take the elevator up to the 3rd floor and you'll see you all on Saturday at Red Mill at 7:30 or 9.us there. This way there's no chance of losing them and those of you who have just joined us will have access to all the recipes I have posted in the past. Please feel free to add any of your favorite recipes. The more recipes we have posted, the more creative and interesting we could make the Weight Watcher Program.
    Crock Pot Santa Fe Chicken

    Servings: 8 servings • Size: 1 cup • Old Points: 3 pts • Points+: 4 pts
    Calories: 190 • Fat: 1.5 g • Fiber: 5.6 g • Carbs: 23.1 g • Protein: 21 g
    Ingredients:
    24 oz (1 1/2) lbs chicken breast
    14.4 oz can diced tomatoes with mild green chilies
    15 oz can black beans
    8 oz frozen corn
    1/4 cup chopped fresh cilantro
    14.4 oz can fat free chicken broth
    3 scallions, chopped
    1 tsp garlic powder
    1 tsp onion powder
    1 tsp cumin
    1 tsp cayenne pepper (to taste)
    salt to taste
    Directions:
    Combine chicken broth, beans (drained), corn, tomatoes, cilantro, scallions, garlic powder, onion powder, cumin, cayenne pepper and salt in the crock pot. Season chicken breast with salt and lay on top.
    Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Adjust salt and seasoning to taste. Serve over rice or tortillas and your favorite toppings.

    Mediterranean Chicken Casserole
    8 (1/4 lb.) skinless chicken thighs or 2 lbs. boneless, skinless chicken breast
    1 (14 oz) can quartered artichoke hearts, drained
    ¾ cup chopped pitted dates
    ¼ cup golden raisins ( I used 1 cup raisins and eliminated the dates)
    12 pimiento-stuffed green olives, halved
    2 Tbs. light brown sugar or 1 tbs. Splenda Brown Sugar blend
    2 Tbs. balsamic vinegar
    3 garlic cloves, minced
    1 Tbs. capers, drained
    1 tsp. olive oil
    2 tsp. dried oregano
    ½ tsp. salt
    ¼ tsp. black pepper
    ½ cup reduced-sodium chicken broth
    1. Combine chicken, artichoke hearts, dates, raisins, olives, brown sugar, vinegar, garlic, capers, oil, oregano, salt and pepper in large zip lock bag. Squeeze out air and seal bag; turn to coat chicken. Refrigerate, turning bag occasionally, at least 8 hours or up to overnight.
    2. Preheat oven to 350
    3. Remove chicken from marinade and arrange in single layer in shallow casserole dish or baking dish. Pour marinade over chicken; add broth. Bake until chicken is cooked through, 35-45 minutes.
    Serves 8
    6 ppv per serving
    We had it over 1/2 cup brown rice for another 3 ppv. Couscous would be good too, but I didn't have any.:(
